Kahou Farm is located in Water Valley, northwest of Calgary. With goats, alpacas, chickens, a few cows, bees and a large greenhouse for strawberries and greens, owners Aria, Farzad and Alyssa round out their offerings with a variety of oyster mushrooms.
These mushrooms are grown in locally-sourced, untreated straw. The trio utilize collected rainwater for the majority of their growing requirements as well as LED lights, which use very little energy, for the “fruiting” phase of mushroom growth.
Yellow oyster mushrooms have the most “seafood-eque” flavour of the options we carry and make a nice substitute for meat in seafood-based dishes.
Blue oyster mushrooms have a classic, earthy, umami mushroom flavour, somewhat like a more concentrated cremini flavour. These are great anywhere you would normally enjoy mushrooms!
Elm oyster mushrooms are similar to blue oysters, but slightly milder. If you’re not a huge fan of the mushroom flavour, these are the way to go!
- Tips for Use
These mushrooms rehydrate quickly (about three to four minutes) in water, though you may also want to rehydrate them in broth, or add spices to your liquid for added flavour. Grate the dried mushrooms with a cheese grater prior to rehydrating to speed up the process. They may also be added directly to dishes like soups, stews or stir fries, but remember that they absorb a lot of liquid, and plan accordingly.
You may also crush them into a powder and use to thicken dishes — especially delicious as a thickener in gravies!
